I have an older Miller Legend AEAD-200LE with a 16hp Onan that has an LP conversion on it. It has started to give me issues running. It starts up and runs fine for the first 5 mins but then starts backfiring/coughing/sputtering and generally struggling to maintain speed. It does this at idle and at high speed all the same. I don't have any experience with LP so can anyone tell me where to start?

Have you made any changes to the machine since it ran last? No matter how small, or unrelated to its running.
It sounds like you are running out of fuel.
LP gas will freeze and get too cold to vaporize in heavy use.
A friend of mine got a backup genset for free after the hurricane. Lots of folks bought them, but decided not to keep them after the power was restored.
It was designed to be hooked up to one of those large 100gallon or larger tanks. To try it out, he grabbed one of the tanks off his camper.
Cranked up and ran great. For about 3 or 4 minutes, then started sputtering and quit. I happened along a few minutes later, because he had called and wanted to show off his new toy.
He was trying to get it to start, when I walked up and pointed out the sheet of ice on the tank. It had drawn the gas faster than the tank could absorb heat from the air and got too cold to vaporize.

The larger tank had more surface area and the larger amount of liquid would take longer to freeze. Also, your regulator is designed to either regulate liquid or gas.
Your tank has to have the right type of pickup inside to make sure the regulator gets the right stuff. Usually there is a gas and a liquid fitting on the tank, but if you bought a new tank it may not be plumbed right internally for your use.

I notice some insulation on the fuel line. If it was not on there before, the machine might have been using the exhaust to warm up the line to prevent freeze up.
