question about rims and tires and lift

My 74 k-10 longbed doesn't get wheeled anymore so I am in the process of fixing it back up into a pavement pounder. I am taking out the 4" rough country lift, and putting in brand new 2 leaf stock replacement front springs and 5 leaf 56" springs from an 80's 1/2 ton in the rear. I love driving the truck, it just needs to ride nicer so I am planning to put Bilsteins all the way around. The truck has a 2" bodylift which is staying put. I plan to run 285/75/16 tires (33's). I am trying to pick out wheels and I found some that I really like, they are 16x8" with a 4.5" offset. What would be a good offset for these trucks, I dont want them to set in too far and rub the drag link or leaf spring while turning all the way. The reason for the height decrease is ride, useability (bed height), and it needs to occasionally fit in parking garages.

also, should I get the front springs with 2 leafs or 3? I have a different bumper and a winch, but that isn't that much weight...I am going for the best ride. The truck has a smallblock.
