I'm going to put a roll cage in place of the bed on my truck, but i need to clear up a few things before i start. First, what thickness tube should I use? I was thinking maybe 2" 3/16, or should i use 1/8? Also, as far as mounting it goes, I was planning on just using like an L shaped mount that would sit over the frame with some thick rubber between it and the frame and then just bolt it in with 3 bolts. What do you guys think?

2" .120 (1/8") wall is what is generally used for fullsize truck rollcages. As long as the design is sound it is more then strong enough to handle the job. The thick rubber mounts are also a good idea.
