how do i set the valves on a 87 350 stock valve train, except for the cam has a pretty nice lope to it but it is still hydraulic flat lifters
 
With the engine running slowly start to loosen a rocker nut until that rocker is clicking at you then slowly tighten the rocker nut until the click goes away then go an additional 1/2 turn.
 
do the 350's spray alot of oil every where

All depends on if it has a stock pump or a high pressure or high volume pump. You can buy some rocker clips that will keep oil spray to a minimum. The set i have are made by cal-van.
 
Ditto on the hot running method of setting valves. The static method is a real pain and tough to get right without a fully degreed dampner. Get some clips to reduce oil spray and have a fire extinguisher handy in case the oil lights up on the exhaust manifolds. Gloves are your friend.
