I had my tranny recently rebuilt. After this I noticed that when I put the truck in reverse the reverse lights only come on in a certain “sweet spot” not when the shifter is fully clicked in the reverse selector. I can have the reverse lights stay on while backing up.. but I have to hold the shifter in that sweet spot.

What do I need to adjust, and how?

There should be slotted holes in the neutral safety switch where it mounts to the colum ,the screws need to be loosened then you can shift into reverse and move the switch till the B/U lamps go on,then tighten it there....note--the shifter linkage may need to be adjusted first,as there isn't much range of adjustment on the switch..
I think a new switch comes with an alignment pin that is already in the holes in the switch you must remove before moving the shifter--aligning these holes *should* put the switch in the correct postion, but it might still need tweaking on the adjustment slots where it mounts..

I'm assuming your truck is a 73-87 model, newer ones I dont know if the switch is the same way---...
