Stainless Steel welders, I need some advise

In my shop. Doing stuff.
I have a repair project on a proofer for my daughters sandwich shop. The casters have pulled out of the bread proofer so they can not move it to clean.

I am looking at building a new base for it and welding solid casters to it. No swivels. It does not need to turn.

I have repaired stainless components in the past, but never ordered stainless from scratch.

What is the best grade for welding. I know I am screwed on the casters. I have to buy what is out there. From what I read T-304 is about the best for welding. Am I correct? Or is the internet fooling me?
 
304 stainless will work well. You could weld a stainless bolt on the bottom of the frame at each corner and slide on a lawnmower style wheel over the bolt. Or just bolt on regular style casters on.
 
Need to keep it as low as possible and easy to clean per health department guide lines. So I am going to use low profile stainless casters. It weighs 700 pounds. Big sucker.
 
Is 316L a requirement for food grade equipment in said town? Im not certain how it applies to an area thats not actually a working surface, but you may be surprised.
