Temperature?

depends on what temp thermostat you have in it mine is 195 degrees, 180 to 200 you shoul dbe fine. and your temp always jumps up when you shut the engine off becasue the water isn't circulating anymore, my guage gos to 220 or so and up to 240 in the summer when i shut it off, but once you turn the truck back on, it drops back down
 
A 350 should run right around 180...

What do you mean it jumped to 210 when you turned it off? you killed it and the temp went up 30 degrees? as long as it wasn't 210 while it was running then it should be fine.

Try a cooler thermostat... depending on what thermostat you get... most thermostats don't open up until an average of 8 or so degrees past their rated number.
 
i have a 180 thermostat in even my dads jumps up when he shouts it off and its a ford..
 
Hello been gone a while nothing wrong going on when you shut of your engine water stops circulating and depending were the sender is heat will collect and temps rise ive seen temp senders in thermastat housings go as high as
240 when you shut an engine off

your ok the temp in the exhast is sevrial hundred degrees heat is going to disapate to the coolest parts water jackets
People get panicked over a little heat some diesal engs run at 220 al day long ive seen eng up to 250 and not damage any thing its not the heat so bad as when water boils the voids it creates cause real severe hot spots.
