1/2 ton status
I welded these perches on to the 14bolt at a time I didn't know as much about pinion angle. What do you think? Can I get by? Or cut and re-weld?

That's about the perfect angle for a CV shaft.
If you don't have a CV, you probably need to take a picture of both ends to see what kind of adjustment is needed (if any).

No CV.Flat belly StaK on the other end.
Looks fine.
I thought the pinion was supposed to be about 3-5* down from the plane of the driveshaft? Don't know but that's what I thought I have read.

Well then as long as the angle at the pinion matches the angle at the transfer case it's fine. Even if they don't match, as long as it doesn't vibrate when you drive it's probably fine.
