Since you won't see any mud (and hence, no mud can get trapped in the boots), go ahead and run whatever you want. IMO, there really is no advantage to running boots.
boots will keep the piston from getting pitted and abraded by tossed up rocks and debris, but do allow junk to get caught up next to it, which is just as bad, long-term.
on my pickup, i have boots on the rear shocks, but not on the front. they won't fit well inside the coil springs. k5 has boots all around. i pull them back after mudding and hit the shock with carb cleaner (which has stripped some paint, btw ).
