Is $1000 a good price for a front axel? and then another 1k for the rear? I might be able to get them cheaper if we bought 3 full and a front half unimogs.

You'll want to go to Pirate for this ... IIRC, that's high for a rear axle.
Also note you'll have a LOT of work to do to make them fit onto a Chevy ... never mind the suspension issues, the torque tube-to-driveshaft conversion, plus brake issues, etc etc... could be VERY pricey.
