On startup I have no white smoke. Then after a few minutes I get white smoke. I had dropped my oil and found no sign of water in the oil. However the oil level was well above full.

After dropping the oil I set the oil level right in the middle between add and full. There is less smoke now.

I'm going to compression test the cylinders today. I hope anitfreeze is not getting into the chamber.

I'm going to remove all plugs, the red wire to the HEI and then turn over the engine a few times for each plug.

The engine has sat for several years. Any thoughts on what could be the cause of the white smoke?

White smoke that disappears quickly after it leaves the pipe is usually steam. Caused by coolant.
White smoke that lingers is usually oil.
If it was way overfull with oil, than that will cause it to burn some usually. But, I doubt it was overfull from too much oil.

Most likely it was from your fuel pump pumping gas into the oil. If you have run it on the new oil, you need to replace the motor mounted fuel pump, and change the oil again.
Gasoline diluted oil will get past the rings and cause the smoke after it warms up. Eventually it will dilute to the point that it smokes all the time.
But by then the engine bearings are usually gone too, so its a moot point.

I just added a new fuel pump not that long ago. The engien has ran less the 20min with the new pump. The pump I put on it was an old one that had been sitting on the self for at least 20 years. Still new.

The white smoke did come out after the engine was turned off. Just not as much. Maybe I need to let the engine warn up some. Problem is that it runs at such a high idle. I need to get that fixed also.

When did you find the oil level high?
That needs to be addressed. If it was overfilled by a po or an oil change place, then no problem.
But if the right amount was originally put in, then you need to find out what else was in there to make it show over full.
About the only two things that can get in there without someone's help is coolant and gas.
