Any issue with mounting windstar fans upside down? I would think not but just want to be sure!

Can't see how it would make a difference. As long as you have good coverage of the surface area of the radiator and condenser you should be good.
Keep an eye out, there are usually drain holes in the bottom of the fan motors. Those will fill up with water and cause premature failure.
