Wiring removal Q's

I've got an 84 CUCV truck. I have replaced all the guages and idiot lights with autometers and have a ton of factory wiring behind the dash that has a connecter on the end to plug into the factory cluster. Well Can I get rid of all this, right now its taped up but want it gone, since I wired everything by itself now. Just wanna know so I dont hurt anything, this is just the cluster wiring, not the ignition or any signal wires etc. Also would I just do it from to fuse box to rid of them completly? Thanks
 
My 2 CUCV's had so many wiring issues, I ended up rewiring them from scratch. bought a $150 full wiring harness off ebay (ez2wire I think, it's a painless knockoff). Now the wiring is MUCH MUCH cleaner. Deleted all of the weird CUCV specific stuff while I was in there, blackout lights and the diagnostic terminals etc etc.
 
The thing is its is pretty much trail only, so I am not running a heater, lights and all the stock things, its basically just the guages, so if I got another harness I would still have alot of unused wires.
 
Then just wire it up from scratch. I put a 18 circuit harness meant for a vehicle with power windows and all kinds of crapped, none of it's wired in, but I cut the wires short and coiled them up, wrapped 'em neatly behind the dash, looks 100% better than the whole mess of stock wiring.
