Would you tow this with your rig if you were me?

Nope. You run the auxilliary cooler in sequence with the stock one. This setup prevents OVERcooling and helps the tranny warm up in the winter. The stacked plate coolers also have a built-in cold ATF bypass which allows fluid that doesn't need to be cooled to slip past without going through the cooling fins.
 
You might also look into getting a set of overload helper or add a leaf springs for the rear. The stock suspention is a little soft when towing.The extra springs will also keep you from getting saggy butt syndrome
My 89 K5 came with a towing package that included an extra leaf in the springs 3.73 gears(you could also get 4.10) and aux. tranny and oil coolers.
10 bolt axles aren't all as bad as people here make them out to be. My 10 bolts have held up well for many many years and thousands of towing miles and lots of offroad use with no trouble. Just take it easy and keep all the fluids fresh and clean and things should be fine.
 
If you use the proper weight distributing hitch and equalizer bars, you won't settle a bit in the rear. My trailer tongue weight runs 750# and I sit virtually level with the bars at max lift of 600#. Without the bars, rear settles about 1-2". Know all about Ft McMurray, used to serve with 2 Canadians that were in UDT with me back in the late 60's. Both were crazy as hell, fearless, and strong as a bull moose. Shared many a brew with them and gained some fond and not so fond memories with those two. Nice country up there, especially in the early fall.
 
And you, a UDT'er, weren't crazy as hell, fearless, or as strong as a bull moose?

I've never met anyone from the old UDTs, but I've met some SEALs that I wouldn't want to mess with.
