Have you looked into the warranty?

I feel like if you have the right receipts (water pump, etc.) for things you were supposed to replace on a new motor, you may be eligible for them to cover the cost of removal and re-installation.

I need to read it more closely, but they're sending me a new head and gasket kit. They only cover $15/hr for labor since I did it myself.

GM Crate? I'd fight that. Who cares if you do it yourself, or if a shop does it. Labor value should be the same.
 
Id go full length and skip the side to side stuff.

Straight down the center as wide as possible without interfering with socket access to ubolts.
