What is all needed to convert a 1991 TBI set up to a carb? A different intake? Going to look a motor tommorow that is still in the truck.

Can't you get the FI set up? Would make more sense to upgrade to EFI if it's all for sale.
Why would you do that? Keep the TBI, it's basically a slightly modified carb anyway. I have never had any problems on any of mine in the past 16 years.
Should have read your rig specs first. If you have an opportunity to get it all for the same price get everything: wiring, computer, all lines possible. Then you could convert later if you wanted or sell it to someone else.
