I have acquired some rust free 91 k5 blazer doors. Other then the mirror will it be a direct bolt in for the items from a 78 k5 blazer door? (panels, vent window, door latch, etc.)

Everything should be the same on those except maybe the door panels. Some of the pre'80 years had. A shorter door panel but if the length on yours is the same the panels should swap too.
As far as bolting up to the truck there the same when you start swapping parts between years there are some differences, the newer doors I think81 and up have thinner glass
I forgot the interior door handle are different so you'll have to use the ones that match the door panels. I'm 99% sure the latch itself is the same (assuming both manual or both electric).

I just got a 77 passenger door if you want to trade... And yes, the only thing i have noticed that is different is the interior panel
91 may have different mounts for the side windows as well.
