You can cut the center out of a thermostat but you need to put that little restrictor washer lookin thing back in. If you don't put it back in, the water flows to fast and won't have time in the motor to absorb the heat.
Why? Specially in the summertime round here offtimes the overnight temperature won't get below 95. Motors always warm.
Maybe during the winter, such as it is in Phoenix, just to keep the heater core warm but even then it still works pretty well. Just doesn't really get that cold.
it will run hotter without a thermostat because the water wont cool the motor (wont bin in there long enogh). And secondly it wont be in the radiator long enough to cool down.
