You could spend several days doing all the hikes.
Most trails in Moab are in the if your rig is reliable and you have a capable spotter are very do able. I have done hells revenge in a stock samurai, did I need help, yes I did. Have done Golden Spike with a stock IFS Toyota, he also needed help but not much.
Usually first timers want to stop WAY more often then the guys who have been several tines. Picture taking of the scenery is very common. I've been a bunch I see something new everytime
