Back in the day we drove hundreds of miles in rusted out,knocking pieces of crap and wheeled all weekend. Then we daily drove it when we got back home.

I'm not following math on how you save money towing the truck. Any gas truck you would pull with would get fairly crappy mileage compared to the truck itself. Maybe you got a diesel truck lined up to borrow. I don't know. You'll do what you can to get out there. I won't beat you up about not driving it. As long as you show up you will have fun, truck or no truck.
These beasts ain't cheap to drive for sure. I'm saving my ass off to afford to go to. 12mpg with mine to drive over 7 hours one way.
Part of it is my upbringing. We never flew anywhere when I was a kid on family vacations. We drove. Most of the time we were going to a convention for the Nomad club. So the whole family stuffed into our 57 Nomad and took off. Dad carried a small tool box and a spare set of points, condenser and brushes for the generator. We just went.
I think all he ever had to do on a trip was replace the generator brushes. The car was pretty reliable despite the nasty solid cam he had in it.
I've learned to be prepared. Take tools. Take spare parts you think you might need. And for the LS swapped or EFI in general you should bring some type of scan tool device and a volt/ohm meter and know how to use it.
The best way to make sure a ride is road trip ready is to daily it for a couple of weeks. Find and fix issues as you come across them. If you get through that time without any issues, take the road trip. If it can't handle daily traffic, heat of the day or just isn't reliable then you a probably not ready to hit the highway.
Just a guide I've used and it has worked for me. Even if I had to suffer without ac it was worth it.
