RJFGuitar is right about Cummins engines being easier to "bomb" out to make big power. Having said that, it didn't sound to me like your intended use was to build up a 500HP+ diesel, which can be done with the proper amount of money on either motor. With proper maintenance, both the cummins and the 7.3L will very likely outlast whatever vehicle they are bolted into. If you want to learn more about the cummins, the diesel registry is a cummins oriented site you can go troll.
Please note I consider proper maintenance to include guages (see my original post). You must pay attention to EGT's and transmission temps, especially with any mods or towing, if you want long service life.
As I and RJF mention, the D60 is preferable over the 50 used in the earlier F250 models if you plan on doing any real off-roading. However, for a tow rig, you are looking at the same rear axle, no matter what, unless you go with a dually, which would be a Dana 80.
If you find a 2000 or similar that you simply love but are feeling very worried about not having a dana 60, PM me and I'll hook you up with a guy off pirate who (supposedly) can hook you up with a new 60 for very reasonable. (all of that is word of mouth and I cannot recommend from personal experience).

If you are in the market generally for a PSD and don't care as much about 4x4 or pickup, such as an Excursion with a 7.3L (2WD), it happens that my father in law is in the market to sell his '03, which is pristine.

I do like the body style of the SD rather than the Dodge, just a personal preference
