Can I fit these tires on a 4" lift or not? If so, would you go 16x10s/15x10s or 12" wide?

Define "Fit". I have a '90 K5 with 36x14.5-16.5 on it. 4" spring lift. 8 lug swap, 3/4 ton. I did a ton of fender cutting and rework. I also moved the axles forward and back 1.5" each. Without cutting the fenders, not a chance.

Just for a cruiser around town. I don't mind trimming a little, but don't want a massive amount of cutting.

Pick a smaller size, you will be cutting a ton to fit those right. A 14.5 is a real wide tire. To clear those without cutting you need about 7" of lift. I wouldn't do that either.

Smaller height tire or width?

Narrower. I am all about low lift trucks with big tires. Low center of gravity is the way to go. Also keep in mind that actual tire height varies by manufacturer and model. I ran 36x14.5 radial swampers for many years and to tell you the truth I hate them. Heavy, tons of drag on the street, poor performance on wet or icy roads. They also bog you down in snow and mud unless you have a ton of horsepower. A 5000lb truck isn't floating on top of anything, Its going to the bottom.

35x12.5 fit on 4" on 8"wheels 4.5 backspace on a 60 front. I could squeeze 10" wheels no problem but larger would get choppin.

35x12.50s?

So a 10" would work? Or is 8" wide ideal? I don't mind a smidge of cutting, I just don't want to take a sawzaw to it.

If you want a 36x14.50, you'll need a 6" lift unless you want to trim a bunch. As mentioned above, 35x12.50 on 8" wide wheel with a 4" lift works without trimming (or very minimal). I have about 5-1/2" of lift (3" body, 2.5" springs) and clear a 375 wide Mickey that's about 35-36" tall on a 10" wide wheel. There is very minor rubbing at full lock going in and out of driveways, but not enough to even bend sheet metal. No way a 12" wide wheel would work.

You can put 35x12.5 on the stock wheel.
On a 89 k5 I ran 35x12.5 on stock wheel with no lift. No cutting in the rear, I clipped the corners in the front and cut some of the inner wheel well. It still rubbed going into a driveway at full lock and definitely rubbed offroad but the rubbing was on smooth sheetmetal
I ran the same on 4" lift but I put new fenders on, no cutting. I didn't street drive this setup but I went offroad once. Tires rubbed the fender lip and put some nice cuts into the sidewall. Almost ruined the front tires
On another K5 I ran 37x12.5 on 16.5x10 wheels with a 4" lift. No cutting in the back and minor cutting on the front (mainly because of rust) Didn't rub with street driving but I imagine it would definitely rub if I went offroad (I never did with this truck)

I had 8" wheels with 12.50 35s on my old K5. 4" lift. Had to bend the bottom rear corner of my front wells in out on the trail with a BFH. After that they tucked beautifully way up in the wheel wells. They were BFGs by the way
