Coolant level keeps disappearing and not leaking?

I'd suspect the radiator long before the water pump, especially if the engine stays cool with no load.
 
It could still be a headgasket even if its not overheating all the time, blown headgaskets do mysterious things sometimes. You can get a little testing kit that has you mix some coolant from the radiator in a vile with a solution and turns a certain color if you have a blown headgasket. Its really easy to do and not very expensive.
 
Thanks for all the help. I actually got the truck towed home for free so I can work on it over my Christmas break. I am pulling the heads and sending them out, valve job, seals, valve rollers need installed, and all that good stuff. I will check it first, but thats my plan and it seems to be a bad head gasket. I will check the radiator out too. I wonder if the guy who I bought it off of put some stop leak in it and I never knew it. He was a crook anyways, I wouldn't be surprised. I will figure it all out this week and after Christmas. Thanks again for all the advice. This truck knocked about 10 years off my lifespan. Figured out what it was....

One blown head gasket and the other was cracked and also had valve damage and a cracked head. Got the new head for 50 bucks and had both heads drilled out 30 thousandths over so I did not have to get the new guides tapped out. Oversized valve stems and a boil and shave should do it. There was stop leak in there too so I think somone before me knew about it! That bonehead. Got the gaskets and seals and valve rollers and it should be done soon (second week in January)

2 blown head gaskets but I found 'stop a leak' in there. He must have put some in before I bought it and failed to tell me. Anyways, extensive valve damage and a cracked head. New head and oversized valves installed and positive end seals. The truck runs great now! put about 250 miles on it so far and its a champ. Better fuel milage too. Terrible around town but double digits on the highway. Just hard to start in this cold PA weather. Thanks for all the help! Take care
