I would think a thin sheet of metal like aluminum or diamond plate would be noisy and cause echos. I would use thin plywood (not like wall paneling) and carpet (spray glue the fronts and staple the backs trimming the corners to angles). Find a good side (if you can't find both sides) copy one, then flip it to make the opposite side. The passengers side has the gas fill tube, so make your cuts accourdingly. I took matching carpet and sprayed the tube with adhesive and glued the carpet to the it, then installed my side panels (I used three rolls of 3/8" aluminum backed insulation from JC Whitney's insulated from firewall to tailgate and up the sides before I replaced any of the interior or carpet). I'm using the factory side panels but mine are in really good shape. Custom panels are great for new speakers. I also built a deck in the rear behind the back seat for storage when the top is off. Its lockable and bolted to the floor. Good luck.
