Fuel gauge still pegged at 3 o'clock after sending unit replacement

Update: I was going to drop the tank again and take out the sender but I realized how much of a fight it would be to get the hoses and lines disconnected. Just figured I'd live with the gauge not working, the trucks been sitting out in the street for almost 3 weeks and I wanted to get it running.

So once I got it all hooked up and filled it with gas, I took it for a drive. Gauge was still stuck at first, began to move as I gave it the throttle. When I'd let off the gas, it shoots back to 3 o'clock, but giving it gas brings it to the right level. Only took it for a drive around the block but the needle is sitting in the right spot with the enigne off now, hoping that all it needed. I'll keep you guys updated on how it works out. Once again, thanks for all your help!

That’s good news!
But, one of two things could be happening. Either there’s a spot(s) that the wiper arm on the rheostat is not making contact or ... if we could revisit your video and observation that I made of the gauge jumping around.

Was that your doing by making/breaking contact with ground? What happens if you clip the sender wire to the frame and leave it there? If the wire going to the gauge is broken inside the insulation then you handling it or the vibrations from the road could be enough to break the connection and peg it to 3 O’clock. If the gauge stays steady then try wiggling the wire around and see how the gauge responds.
