Alright, I have the car now. First thing I'm gonna change is motor oil and filter. I'm thinking filter should be WIX 51061 but I have no idea for oil. Any suggestions? It's in California.
 
Filter number is correct for GM medium length canister

What oil do you usually use?
I’ve stuck with Valvoline my whole life
 
I have used Valvoline and Castrol. I had Castrol do some good cleaning inside an old TBI 350.
 
I also use Valvoline or Castrol, whichever one is on sale. One or the other is always on sale.
 
That's what I would get. 10w40 is fine for hot temps too, slightly thicker.
 
Parked the car on flat surface, red ATF is leaking quite fast. It looks like it's leaking from the flywheel cover. Could it be torque converter seal? Or maybe dipstick? @imiceman44 worked on governor and pan so I assume these are not leaking. I'm thinking of pulling that flywheel cover to see how the situation inside looks like. The transmission is freshly rebuilt.

My 700 leaks from the dipstick tube seal if I park it with the nose downhill and leave it for more than a few days. If that's it, you'll have fluid above the pan rail and down over it to leak down. The other possibility is found from pulling the inspection cover. If the input/pump seal is the leak the fluid path will be right down the case between the torque converter and the pump/case.

Believe me it's coming from the tv cable base, runs on the edge and drips in the front.
I did overfill it a little when I changed the pan gasket so there will be more fluid pressure on the leak area.
Not saying it can't be the torque converter seal but it's unlikely

Don't forget to grease the driveshafts, they are new so they have minimal grease and need to be greased before you drive it too much.
And the transfer cases already have new fluids in them as of a few days ago

How do I grease driveshafts? Should I disconnect them, fully extend and then apply some gear oil one the spline? Do I put grease on the joint too?

No.
Just grease any fitting you see.
At least one on every ujoint and one on the slip
 
I got WIX 51061 and Castrol SAE 10W40 (mineral). I think that's the best oil for that engine in mostly hot California climate. Do you guys use full synthetic oil?

I like Castrol magnatec.
As for the grease I am not very familiar with the brands, I just ask the guys at napa for grease for ujoints to do the driveshafts and grease for bearings to do my hubs.
 
I don't feel that switching an old V8 to synthetic at this point in its life does any good. I run all my stuff on conventional and change it often.
I like red and tacky, I use a Valvoline synthetic grease in my snow equipment but I don't think that would do you any good, it is rated for -40 which is why I buy it. I also use schafers grease, seems fine to me. Any quality grease should be fine, just do it often.

I honestly think that you will be good with that. I also wouldn't change it to synthetic, at least until you run it a while and get a feel for what the engine likes. And then, I would probably only go with a semi-synthetic.

I usually use oil and grease from Schaeffer's, but I have a sales representative whom I have dealt with for years on the trucks at work, so he sells me what I want for my personal trucks. I will really like their grease, but for automotive, you will be good as long as you get something good, and use it often enough, as @HankScorpio said.
 
Wasn't sure on the schaeffers for availability, my buddy gives me a case from time to time from the oil rigs.
