I just bought a 1979 Jimmy I have no idea if it has a little lift on it at all. How would I tell is it has springs with lift on them
 
Look at the front springs.

A) How many leafs are there?
B) Do they have negative arch (ie, are they bent like "^" instead of "v"?
 
If you still have bump stops on the frame and they're very very close to the axle you have stock springs. Or what he said /forums/images/graemlins/wink.gif Negative arch means stock springs... What about the back? Any lift blocks?
 
there are three leaves in the front and six in the back. There are no blocks on the rear axle and the tires are 31 inches tall
 
Sounds stock-height to me.

Stock front springs were 2 leafs, but 3 were an option (although I think 3 were standard with a diesel).
 
Sounds like a stock HD package to me. 5 and 6 leaf packs were avalable in the rear and 2 or 3 leafs in the front. 31's were also an option. Yes you can fit up to 33's on the stock suspension with very little rubbing. (trying to keep the posts down in the garage /forums/images/graemlins/wink.gif)
