All SBC's after 1968 are large journal (except 400 SBC which is even larger) and all cranks can be swapped around without issues except for the 400 crank which would need to have .200" removed from the main journals to fit the main bore of all other large journal blocks with the exception of the 400 block.
Yes you can use a 307 crank in a 350 block with 327 pistons and end up with nothing more than a 327ci engine. You will need to rebalance the engine though. Just because the stroke is the same doesn't mean the weigh on the throws of the crank are the same.
