Look at truckfridge as they have modern 12v compressor fridges that could work in that space and not require the same amount of venting that a typical RV 3-way fridge would need. They need some venting but I bet you could do that to the front of the cabinet rather than going through the outer skin. Not many would see the vent behind the seat.

As far as the fridge goes I'd get one that has ac & dc power inputs. This way prior to a trip you can plug it into your house/garage and get the fridge pre-chilled vs running down the battery in the truck to do so.

I do this with my ARB fridge and it works great. I can get it down to the temp I want a day or two before a trip, load it at my leisure prior to loading the rest of the camper.

Also along those lines, any thought to running an auxiliary battery for the camper power? Modern 12v fridges usually have pretty low power consumption but running the entire camper 12v system off of the single truck battery might have you out of power by morning. Plus for the fridge to run right you'll need some good sized wire to supply it right from the battery. I think I ran 8ga for mine. Food for thought..

Yep, Im definitely going to run at least two batteries. The truck is already wired for it, the second battery is just missing. It is also wired for shore power too so I will definitely be getting an ac/dc fridge.
 
Hoping to get more pics. Does it have an ID tag on the back?
