New wheel fitment

buying new tired for the wifes cherokee, was gonna get her some new rims too.

How well would a 235/75/15 tire fit on a 8" wide rim ? would that be too wide?

I think stock width is 7" or something like that and it looks like if i went an inch wider it might be too wide for the tire.
 
My Dad has a Baja bug with 235's and 8" rim. The rim looks like its a little wide.
 
The tread width on a 235 is about 8" and the sidewall width is maybe 9.5"...yeah, you'd have the wide rim look going pretty well.

Just because it can be done doesn't mean it should be. Frankly I'm not a fan of 235's on 7" wide rims either.
Also consider that those Jeeps had a decent amount of backspacing and most aftermarket 15" wheels with the 5x4.5" pattern have an inch or so less backspacing Then add a wider wheel to the equation and you end up like a lot of the Jeeps around here with stockish tires on wide wheels and a decent chunk of the tires sticking out from under the fenders.

Keep in mind for most intents and purposes a 235/75R15 and a 30x9.5R15 are about the same. If one is larger than the other in any dimensions it is so by a fraction of an inch.
 
Looking like i'll just keep the stock rims. Just that i found a used set of those black fake beadlock rims for really cheap and the wife liked them.
ANd i checked the backspacing, turned out to be about an inch diff like you said
