Rear tire on passenger side locks up ??

yes you can and should. This requires setting up gear pattern. There are many choices of aftermarket traction devices.
from fairly inexpensive to very. Many discussions on CK5 about them and best type for certain driving conditions.

As Wes mentioned prices vary depending on what type diff you choose.
A True-Trac is very user friendly and fairly effective but it ain’t cheap.
A cone type spring loaded L/S is a nice choice but once they’re worn out they are not rebuildable.
A spring loaded clutch type L/S is also decent but the clutches wear out with age and use and will need replacing from time to time.
Also, on the spring loaded L/S’s they usually are offered in 400lbs. , 600lbs. and 800lbs. preloads with each being more aggressive as the pressure increases so choose the one that will suit your needs best.

I believe those need the larger size 10 bolt carrier bearings, no matter which axle spline

That should be a good kit, Timkin bearings are normally good bearings. Some imports these days, but mostly made in USA
A good unit for a general L/S in a 12B application that will see a lot of street driving and occasional mild trail usage.
Comparing cost, durability and effectiveness this is a good choice for an all around type of 4x4. There are better options but you will pay dearly for them - bang for the buck this one is a good option.

Differential installation kit arrived today but as you can see it says made in China. Bearings are Koyo and say Japan.
Think I might ship it back and get the other kit with Timken bearings that are made in America?
Any thoughts on these Koyo bearings?

Nothing wrong with KOYO bearings at all.
And like mentioned earlier there are many countries producing Timken stuff nowdays so there’s no gaurantee that you will get old USA stock.
Go with confidence on the KOYO stuff - its a good name brand.
Koyo is good, only German would be better than timkin or koyo
The kit and crush sleeve and small parts may very well be from China but the bearings are trust worthy.
Keep us posted on the installation and take plenty of good pics - we all love a good differential job type of work.

Seems to me the bearings weren’t that expensive
I would if it were mine , especially on an axle that you don’t have any history on - bearings are cheap enough and like Bent said seals at a minimum.
This way you know your rear axle is rock solid fresh.
