What would be good to paint the interior metal pieces with? Im going to Poly the interior floor but the lower half of the dash and the pillars will need to be painted. Should I prep it like I would the outside?

73 K5, 350, auto w/factory air, 4in susp, 35's
 
Definitely prep the interior - and probably moreso than you would the exterior, particularly if your rig has been smoked in at any point, or you've used any kind of air fresheners. For paint, I'd just use a single stage acrylic enamel - it's cheap, easy, and won't attack plastic bits and pieces.
