Someone gave me their spare 350 manifolds but they don't fit. Can I find straight manifolds without emissions probes to fit my current exhaust set up? What do I do with the vacuum hose from the carb to the charcole can?

Leave it routed like it is?

There is no good way to vent a fuel tank outside of using the EVAP canister IMO. I don't know what the emissions setup looks like on your rig, but keeping EVAP intact and getting rid of anything else on there should be pretty easy.
