man I forgot how nice having hydroboost is... However my brake pedal seems slow to rebound/return to the normal position after I have applied the brakes, the brakes almost hang momentarily after I have come to a complete stop, when rolling you can watch the pedal take a few seconds to return, is this a normal result? Its been awhile since I drove anything with hydroboost.

yes hydroboost is a bit slower for return in power or non power modes i have seen in basicly all vehicles i have worked on.

best and gm way to test if working is motor off. brake 5-6 times to deplete built up boost. then hold brakes on floor. fire motor pedel should drop then push back at you . if so its working just fine.
