I'll need to take it in and out at least a few times. I'll be using a crap load of masking tape to paint. It's going to have 3 colors on it fully assembled.
Is that the wrong way to paint it?

Paint it seal it up then put it in. Pulling it in and out is no big deal with the front clip off.
Why dp you need to pull it multiple times?
I'll need to build the shock hoops around the headers and I don't want to do final weld with it in. Also when it gets painted I want it out to.

That's the complete last thing on my list. Paint doesn't make it go.
I just can't get past the fact that you have that badass motor just sitting there....If it was me I would have had that motor in and running as fast as I could.
But it's your rig. Just don't wanna see you get to that point where you realize... Holy crap it's gonna be 3 more years before I can even drive this thing cuz I bit off wayyyy to much.

That's the point when he calls me to give me the engine.
Once I get the truck rolling again I'm going to get a quote on paint, if I can't pull it off it's getting tossed together.

When is that wedding you have to go to, and whats going to be your paint budget?
Just get it running now! My blazers done for the most part, and bored with it. Give me a reason to find a 6.0 
Wedding is over, bought a few parts and work starts soon.
I would like it to be at most 2k

Yes, I have one around the corner from my house and it always seems jam packed! I have a buddy that knows a guy who owns a body shop, said he could pull a favor for me.

Besides I'm willing to bet that a body shop would prefer to work on a truck that can move under its own power.
How much body work are you doing on your own? Are you bolting panels on and handing it off or bringing it through blocking fill primer like Chief did? And speaking from experience, double your paint budget and time frame.

My hope was to hand it off completely stripped so they could get ever nick and cranny.

I have a friend who would tell you triple it..... $15k and a year! Granted it was a custom green on green flame job...
Paints over rated IMO, until the rest of the rig is worthy of it looking pretty
If you are pulling all sheet metal and doing inside, that 2k won't get into block sanded primer. I recommend learning how to straighten the panels and get it ready for paint, then run it through a booth.
