Time for some updates:
I sent the dash to Al Knoch interiors to have it recovered. It took 6 months to get it back but they did a great job. Looks brand new.
I bought a new OER console from Restore-a-Muscle Car. Comes in black but it will be painted to match the rest of the interior.
I got the front seat covers and door panels from Legendary Auto Interiors. Only took 9 months to get them. The rear seat covers should be here by the end of September.
Everything, except the under dash wiring, has been removed from the body. I built a wooden frame and installed wheel dollies, on each corner, to set the body on and make it easy to roll it around and work on.

The passenger side floor section needed more work than I thought. At first I thought it was just surface rust.....But I could see pin holes with the light underneath. So that section got replaced. A small area on the firewall, just above the floor patch, didn't have any rust-through but still needed sanded down and treated.

Once the floor was finished I took it outside to media blast the underneath. It was 107 degrees that day.
