Is there such a thing as 304 stainless exhaust port flanges? What I've seen so far all appear to be mild-steel....

Worst case you could have them laser cut or on a water jet. I'd imagine it won't be easy to find any to just buy.
There must be shops that build high-end stainless headers that would be willing to sell me a set of there flanges... No need to re-invent the wheel, just need to find the "players" for BBC stainless header stuff.
The plan of record so far is to try to figure out the ICEngineworks.com website so that I can order a set of their 1-7/8" plastic modeling header kits.
Their tube cutting fixtures are stupid-expensive and you need a bandsaw to use it, so I'll probably just go with the simpler tool from Cone Engineering. It will allow me to mark my cuts accurately all the way around the tube, and I'll just cut them with my 4-1/2 disc and dress them nicely on the big Apex 20" wheel...
So I figure.... build the headers to fit the space I've got left in the engine bay/ wheel wells, then buy the Dominator EFI system.... and that will give me enough stuff to get the engine running and broken-in on my run-stand.

Great progress lately!
Can`t wait to hear it run though!! That will be a HUGE motivator for you! 
Although I`m sure it will be a bit of a wait yet...homemade SS headers won`t be made in a big hurry!

They like to make them 3/8" thick as well in 304ss.

Man I am envious of what you have done with this. Looking forward to "your" vroom vroom noises being backed up by the rumble of a big block.
Catching up here. On the headers....why 1 7/8" inch primaries instead of 2"? FWIW, mine have a 3/8" flange.
2" flanges can be hard to find in anything thick, 1 7/8 is usually easier, u less you have a company cut you some. Stainless is great, but building headers can amount to a lot of waste and stainless is considerably more expensive. Most my customers dont want to pay the extra expense so I use mild and have it coated inside and out in jet hot. It works great and keeps a lot of heat out of the engine compartment. Couple sets I've done for various Hotrods. When your ready you build a set Id be happy to share some tips to make it a bit easier. Most my sets were very limited spaces.
