I was pretty pissed the other night when my steering gear decided to puke all over the place, I feel your pain.
I liked mounting them low and close to the body as it kept everything nice and clean but the steering shaft will dictate how everything ends up more than anything.

9.5ish. Ported heads, 2.19/1.88 valves. Air gap/rpm intake, all new bearings, oil pump, etc.
Haven't decided on FiTech or the Sniper yet. I'm waiting until that the last minute to order those as there always seem to be new stuff or revisions made.

That being said... comp cam desktop dyno still put it at 562hp/640tq with headers. Torque peaks at 3500-4000rpm so it should plenty of power right off idle with the 2200 stall I got for it. I also could run a blower on it later with that compression. Just need to gap the rings a bit more.
for the headers have you determined a design that will work with your exhaust routing? Long tubes are obviously better for this engine but that may not be an option with exhaust packaging.
We're about done with my buddies ZZ502 with the FiTech MeanStreet 800 kit. It's a big bad bitch packaged in a 72 K5 on tons with a hughes 400.

Definitely look at Sanderson headers, I really like their products and service. We needed a set for the 57 and they did a great job explaining dimensions so we could make sure they worked with the custom engine mounts and tight frame clearance. @mrk5 has a set on his BBC CC as well.
The ZZ502 was built by the PO of the truck, had an 850 Holley and stock GM HEI on it. He's not sure what's been modified in the engine but found out real quick that it needs some race gas to keep it from pinging. Ran like a raped ape as it was but it was cold blooded and didn't run as well at altitude and on inclines where we use these trucks. So he bought the kit you linked (30008) after talking with FiTech about what kit is best for his application. The distributor is a drop in billet from MSD with a mechanical advance. Our goal is to see if we can get this running on pump 91 with some timing adjustments so he doesn't need to buy barrels of 110 for it. Last week we dropped in the new distributor and it was running pretty good but we ran into a charging problem that eventually kept the truck from starting.
