Lots of people have done that. Much less work. If you can make enough money raising crops, why horse around with livestock. Who wants to go out in a blizzard and check cattle?
Much more a product of they were making better money farming than they had ever done (partially thanks to ethanol) and had enough cash flow to afford the privilege of NOT having livestock.

The only problem is these farmers also had to work second jobs to make ends meet at the same time since they didn't have 1000's of acres.
1000 acres is enough land for one farm family. There are a lot smaller farms out there.
