Unless you pattern your shotgun with a given load and choke, you really don't know what it's doing. It's not unheard of for certain combos to throw a donut - a nice ring of shot with a big hole in the middle.The only thing I've changed is I went from a full choke to a modified choke, and now I'm shooting 3" #2's instead of 2.75" #7.5's.

Any shooting club or range with shotgun sports will have a pattern board, or you can make your own very easily.
You can certainly process them just like a domestic hog. I just quarter them and throw the quarters and head in the smoker (with a few of the choice bits cut out for other use).I have never lived in an area where hogs were available to hunt. Do you process them like you would farm-raised pigs? How does a wild hog taste?
