How thick of a wall on a 1.25 SS tubing do think I would need so it would not crush in a bender when doing a 90 degree bend?

no experience, but i would think you could do .090 without probs....

Depending on the grade of stainless. If it's T-304 chances of pipe kinking is highly likely. If it's a grade T-409, 16 gauge would probably be good, 18 gauge is probably going to crush/kink. I am going off of exhaust tubing experience. Hope this helps
