Are 4 of these stands solid enough to hold the truck up while I take all 4 wheels off and have the new tires mounted?

You should be fine. Do the front first and keep the stands low as possible. Then lift the back.
I’ve done the same in my driveway and it’s twice as steep as yours.
I'll have to take all 4 off to drive them to the shop to have the new tires put on. Hopefully it can be done in one day.

The other option is doing the front then the rear. Discount tire isn't far from me, but the waiting double time would be a pain. I think these four stands should be ok to hold the truck up for a few hours. Makes me nervous hahahahaha.

Your good to do all 4 at once. Just put the front on stands first. That way when you pick the rear, it’s going towards level.
 
Be sure to watch the stands under the opposite end you are jacking. If the jack doesn't roll as you raise the truck it will pull the truck off the stands it's on.
I have put all kinds of full size trucks on 4 6 ton stands and remove all tires, both axles, trans.
Tall truck with big tires I will remove tires and put on stands to lower it down, so my vertically challenged ass can work on it
 
You’re good to go, if it was blacktop I’d say be careful and maybe lay down a sheet of steel under your stands as I’ve seen stands sink in the blacktop on hot days but you have concrete, those stands should be plenty stout.
 
I'm looking forward to whatever tire you eventually do get. I can tell you've put a lot of thought into it.

it is your truck and you have to do what makes you happy, but...

if you truly do not like how tall it is, buy 35s for a 17" wheel. save the $700+ for new wheels to buy a smaller lift and drop your truck down. If I remember you have custom springs; you can always sell them to recoup some money also. I think it would be better to have the truck the way you want it so you will be wanting to drive it more. if it is not how you want it I think you will not drive it as much. same thing with tires and wheels. if we were closer I would be trying to make a deal on your lift and tires/wheels.
