One bank running hot vs other.

Yep true L31 block and heads needs bypass hose like a big block chevy does or you get hot spots and up/down cycle of heat and smell coolant as it goes in/out overflow jug .
 
waited till engine was up to temp and thermostat was open and pointed ir gun to left and right of thermostat

Those numbers jive with expectations. The left cylinder head usually runs 10* hotter than anywhere else

Yep. Not a flow issue. But the left should be warmer than that with the header Temps so far off.

Check the heads just above the exhaust ports.

Is it dual exhaust out the back? Catalytic converter? Cross over pipe?

dual exhaust with dual cats, dual mufflers and a crossover

made some adjustments to the tune. its better
 
Id assume a plugged cat would make the truck run horribly.

Cant be unless sequential efi . . Duel plane intake does 1/7 - 4/6 . . Then 3/5 - 2/8 . . So if 1 hole bank is hot its multiport or a weird problem .
 
Not if it is partially restricted. Completely plugged yes. Not letting the heat flow efficiently will back up the heat in the headers.

Can you disconnect the exhaust from the headers, then check the temps?
 
Looks like I can unhook the exhaust. Can try that this weekend.

Would one be hotter if it was partially clogged?

If the manifold is hotter it should be hotter but not necessarily by that much but some
