If I didn't work in the snow and cold I'd never get anything done.
Then there is the option of welding a tube through the fuel tank for the PTO driveshaft.

So coming back to reality. In your case absolutely nothing wrong with the saddle tanks. Bend up a couple skid plates. Call em done.
All that snow and working outside must be annoying. I'd be losing everything in it if it snowed that often!
The big block shouldn't exceed 400 hp I wouldn't think.I have installed 3 snipers this year and they are really nice overall. No complaints. As long as they meet your power levels you will probably like it.
