You ever heard of the term analysis paralysis? Meaning you might be over thinking just a tad.
210 is pretty dang normal for any fuel injected gm v8. They want the engine running at that temp to be most efficient.
I can totally understand wanting to upgrade due to the higher loads for wheeling. So upgrading to big block/diesel radiator, shroud, clutch and fan will work just fine. You just need to get all the parts together. The BBC/diesel radiator has a different top plate and hold down brackets.

210 seems ok to me, I don't see why you are so worried about it...
